Indian Chicken Tandoori Recipe

Read the easy recipe of Indian Chicken Tandoori.

Ingredients:

• 8 Large chicken pieces
• 1 1/4 Cups yogurt (curd)
• 2 tbsp Lime juice
• 1 Cup chopped onions
• 3-4 Dried red chilies
• 2 tsp Coriander seeds
• 2 Garlic cloves, crushed
• 1″ Piece ginger, grated
• 1-2 Cloves
• 2 tsp Garam masala
• 2 tsp Chili powder
• Salt to taste
• Cilantro and lemon wedges, for garnish

How to make Indian Chicken Tandoori:
•    Make slits in the chicken pieces and rub lime juice and salt over them.
•    Keep aside for half an hour.
•    Grind dried chilies, coriander seeds, ginger, garlic and clove together.
•    Mix the paste with garam masala and chili powder.
•    Heat oil in a pan and sauté the masala. Add onions and fry.
•    Pour yogurt and stir well. Remove the pan from fire.
•    Arrange chicken pieces in a dish and pour the yogurt mixture over them.
•    Refrigerate the marinade overnight or at least for 4-6 hours.
•    Preheat an outdoor grill at medium high heat and lightly oil the grate.
•    Cook chicken on the grill, until no longer pink and juices run clear.
•    Garnish with cilantro and lemon wedges.
•    Indian Chicken Tandoori is ready.

Kadhai Gosht Recipe

Ingredients:

• 1/2 kg Meat
• 6-7 Tomatoes, chopped
• 1 tsp Ginger paste
• 1 tsp Garlic paste
• 1 inch Ginger, chopped
• 1/2 Cup yogurt
• 12-15 Green chilies
• 1 tsp White cumin seeds, roasted and grounded
• 1 tsp Whole coriander, roasted and grounded
• 1 -2 tsp Red chili powder
• 1/2 Cup oil
• Salt to taste
• Coriander leaves, for garnishing

How to make Kadhai Gosht:
•    Heat oil in a kadhai and fry the green chilies till the color changes slightly.
•    Take out from oil and keep aside.
•    Now, add mutton to the oil and fry till the color changes.
•    Take the mutton out and keep aside.
•    Add chopped tomatoes, ginger paste and garlic paste to the oil.
•    Let the tomatoes become soft and then add mutton, salt and red chili powder.
•    Add yogurt and let it cook, till the oil comes up on the surface.
•    Add cumin, coriander, green chilies and chopped ginger and close the lid.
•    Let it cook on very slow flame, for 5 minutes.
•    Garnish with coriander leaves.
•    Kadhai Gosht is ready.

Chicken Biryani Recipe

Ingredients:

• 1 kg Chicken (pieces)
• 500 gm Basmati Rice (washed and soaked for 30 min)
• 4 tbsp Garam Masala (whole)
• 4 tsp Garam Masala Powder
• 50 gm Butter
• 4 tsp Garlic (chopped)
• 1 cup Onions (sliced)
• 4 tsp Ginger (chopped)
• 3 tsp Red Chili Powder
• 1 tbsp Coriander Powder
• 5 tbsp Oil
• 2 tsp Turmeric Powder
• 2 cup Curd (yogurt)
• 3/4 cup Tomato (chopped)
• 4 Bay Leaves

For the marinade :
• 1-1/2 tsp Red Chilli Powder
• 2 tsp Ginger (chopped)
• 2 tsp Garlic (chopped)
• 1 tsp Garam Masala Powder
• 1 tsp Turmeric Powder
• 1 cup Yoghurt
• Salt

For garnishing:
• 1/2 gm Saffron (dissolved in 1/2 cup milk)
• 2 tbsp Rose Water
How to make Chicken Biryani:
•    Put all the ingredients of the marinade in a bowl and mix well.
•    Add chicken pieces to it and leave for an hour.
•    Now boil water, add 1/2 of the whole garam masala, bay leaf, and rice in it.
•    Cook the rice until 3/4 th is done, drain and keep it aside.
•    Heat oil in a thick bottomed pan and add remaining whole garam masala.
•    Allow it to crackle, add sliced onions and cook it till light golden brown.
•    Add 1 tsp of the remaining garam masala and all the remaining ingredients, including tomatoes, but excluding rice.
•    Cook for 5 minutes, combine marinated chicken with it.
•    Cook until chicken is tender.
•    Place alternate layers of chicken and rice.
•    Now sprinkle saffron, remaining garam masala powder and butter in between the layers and on the top.
•    Carefully end it with the rice layer topped with saffron & rose water.
•    Cover and seal it with an aluminum foil.
•    Cook it further on low flame for 10-12 minutes.
•    Chicken Biryani is ready to serve.

Modak Recipe Preparation

Modak Recipe is one of the most popular recipes for the Ganesh chaturthi. Read how to prepare Modak with easy method.

Ingredients:

• For the filling

• 2 Cup shredded fresh coconut

• 1/2 Cup mixture of unsalted pistachios and unsalted cashews

• 1/2 Pinch of cardamom powder

• 1/2 Cup milk

• 1 Cup jaggery or sugar

For the outer cover

• 1 Cup rice flour

• 1 tsp Ghee

• 1 Cup water

• 1/2 tsp Salt

How to make Modak:

•       To prepare the filling, combine coconut, milk and jaggery or sugar, mix well.

•       Cook it over medium flame, stir continuously till they are mixed properly.

•       Add cashews and pistachios and cook for about one minute.

•       Now add cardamom powder.

•       Let it cool, keep aside.

•       Bring water to a boil.

•       Now add flour, ghee and salt, stir quickly so as to remove all lumps.

•       Cover with a lid for some time and cook.

•       Remove the lid and keep stirring.

•       Now remove the pan from the heat and transfer all the mixture on a flat plate.

•       Knead it to make soft dough.

•       It should be neither too sticky nor too dry.

•       Grease the palms of your hands properly and make a ball from the dough.

•       Flatten the dough to make a cup shape.

•       Put 3/4 tsp coconut filling into this cup.

•       Dip thumb and index finger in the oil and make 5-6 small pinches on the outside edges of the cup.

•       Bring them together on top and join to shape a peak.

•       Put modak on a pre greased plate.

•       Make rest of the modaks.

•       Now Steam them for about 15 minutes and serve with ghee.
